Menu Post for Week of February 15th

Howdy all you Rodeo Fans! It's time for the San Antonio Livestock Show and Rodeo, which actually has already started, but my mind has been on Valentines! Well, now that it's over I can think about the Rodeo.  This weeks menu has a Cowboy Theme.  I'm thinking of chuck wagons and being on the trail with some cowboys and their trusty horses.  Hee Haw !!!  Time to cook up some grub! 


Monday:  February 15th

Cowboy Beans and Corn Bread

Cook your Pinto Beans any way you like them best.  Serve with cornbread and spanish rice. 

Tuesday:  February 16th

Pork Chops
Cowboy beans (from mondays menu)
Fried potatoes

My husband always makes our pork chops.  He fries them up in our cast iron skillet with salt and pepper and a little bit of oil in the pan.  That's all he does and they turn out delicious!

Fried potatoes:  I slice about 4 to 5 potatoes up, thin sliced, leaving skins on.  Slice up some onions to saute with your potatoes.  In a large skillet add about 1 tablespoon oil, add your potatoes and onions after slicing.  Fry them until tender.  You can also add 1 tablespoon of bacon grease (if you have some) for added flavor.  Salt and pepper to taste. 

Wednesday:  February 17th

Cabbage and Sausage with Cornbread

1 head of Cabbage (chopped)
1 small onion (diced)
2 T Bacon Grease
1 link of sausage

Place the chopped cabbage and onion and a large pot, fill with water until it covers the cabbage.  Heat to boiling, then turn tempature down to a low simmer. Add the bacon grease 1-2 T.  Cook for about 45 minutes.  In the meantime, cook the sausage in a skillet.  I slice the sausage up after it cooks and add it to your cabbage pot.  Cook together until cabbage is done. 

Serve with your favorite cornbread.  

Thursday:  February 18th

Texas Chili

This is my easy chili recipe.  But, it's good!  

1 lb. Chili Meat
3 Cans Ranch Style Beans
1 sm Can (4oz) Tomato Sauce
1 small Onion (chopped)
2 T Chili Powder (I use Chili Powder from Hatch, New Mexico)

Cook the chili meat and onion in a large pot, add the chili power.  Add the beans (not drained), tomato sauce to the meat mixture.  Stir, add enough water to just cover the meat and beans.  I usually use about 2 cups.  Simmer for about 30 minutes.  

Toppings I use are shredded cheese, chopped onions, and guacamole (if desired).  

Serve with Cornbread or make Frito pies with it.... Yummm!

Friday:  February 19th

Leftover day! 

Saturday:  February 20th

Meatloaf with baked potatoes and greenbeans

Meatloaf:  1 lb ground beef
                1/4 cup bread crumbs
                1/4 cup chopped onion
                 1/4 cup shredded carrots
                1 egg

Toppin:  1/4 cup Ketsup
              2 T Honey
              1 T Worcheshire sauce

 Combine all ingredients together and place in a baking dish, loaf fashion.  Mix topping and pour over meatloaf.  Bake at 350 degrees for 30 minutes.

    Diana, I too love the SA Rodeo. I'm a single mom of 2 teen kids and we went to the rodeo the 1st weekend of February. We bought $10 cheap-seat concert tickets to Tim McGraw and Selena Gomez. For $10 the tickets got us gate admission, 2 hour rodeo, and the concert. It was so worth it. The kicker is the extra we spent on meals. I should take some of your receipes and pack a picnic basket. Anyway, hope your Valentine's Day was great. You have an awesome blog!!

    I have been following the Houston rodeo since I was a little girl. I feel it's just part of me...heehee.I've never been to the San Antonio Rodeo, sure it's fun.
